AMUSE BOUCHES:

· Profiterole with Foie Gras mousse and salted caramel

· Oeuf Mimosa

· Chilled watercress soup

ENTREE:

· Potted prawn with crispy melba toast

PALATE CLEANSER:

· Green apple and Calvados Trou Normand

MAIN:

· Roasted free-range Poussin, with orange and cinnamon jus, maple and prosciutto roasted choux de Bruxelles and crispy Kipfler potatoes

DESSERT:

· Bûche de Noël
