· Asparagus, white peach and French goat cheese salad with ruby red grapefruit dressing, candied walnut in a parmesan basket

MAIN, choose from:

· TOURNEDOS ROSSINI

Beef fillet served on a crouton, topped with

foie gras mousse and Madeira and truffle jus

OR

· CANARD A L’ORANGE

Braised confit duck leg, seared breast, orange sauce, kumara purée and pommes noisettes

OR

· CARRÉ D’AGNEAU

Rack of Junee Gold lamb (pink), carrot puree,

Dutch carrots, broad beans and roasted garlic jus

· PAUPIETTE DE SAUMON

Atlantic salmon and spinach paupiette with

Champagne sabayon, Jasmin rice
